ROASTED RED PEPPER HUMMUS

Great tasting hummus for sharing! Makes a large batch, feel free to halve the recipe.

Ingredients

  • 2 cups cooked chickpeas
  • 2 roasted red peppers (home roasted or from a jar) 
  • 2 cloves garlic
  • juice of 1 lemon
  • heaped tablespoon of tahini
  • 1tsp cumin, ground
  • 1/2 tsp salt (or to taste)
  • 2tbs olive oil (omit for oil free version) 
  • 4 tbs of chickpea water (or 6 if not using oil)

Method

  • Put all ingredients into your food processor or a high speed blender. Process till you achieve hummus consistency. 
  • Top with any of the following: pickled mini chilli peppers, extra chickpeas, chopped sun dried tomatoes, olives, herbs (parsley or coriander work well), toasted pine nuts, sprinkling of paprika or extra cumin or extra olive oil.
