RAW GOJI BERRY CACAO TRUFFLES

Indulgent raw goji berry and cacao truffles, chocolatey fudgy treats.

Ingredients

1 and 1/2 cup walnuts

2-3 Tbs raw cacao (more for rolling)

8 Medjol dates

1 heaped Tbs almond butter

1 tsp good quality vanilla extract

1/4 cup goji berries

Method

First process the walnuts in a food processor till you achieve coarse breadcrumb consistency.

Add cacao, dates, almond butter and vanilla. Process till mixture starts to come together, about 1 minute.

Add goji berries and pulse couple times to mix them throught the mix, the goji berries should stay whole.

Tip the mixture out of your food processor into a bowl. With wet hands (to prevent mixture from sticking to your hands) make walnut size balls.

To make these balls even more luxurious roll them in extra raw cacao powder.
