Mighty matcha granola

Home made granola made with matcha powder and maple syrup.


2 cups of porridge oats

1 cup of quinoa flakes

1 cup of barley flakes

1 cup of pecans or walnuts (or a mix of both)

2 teaspoons matcha powder (use cooking matcha)

1/3 cup sunflower or pumpkin seeds

2 tablespoons of melted coconut oil

1/3 cup of maple syrup



Preheat the oven to 180C.

Mix all the ingredients together in a bowl.

Line a baking sheet with a parchment paper or silicon sheet.

Spread the granola mix onto the lined baking sheet.

Bake for 20min, stir and bake for another 15-20min or until crunchy and golden brown.

Let the granola cool.

When cooled, you can add dried fruits ( I like goji berries or cranberries).

Store in an airtight jar.  Serve with yoghurt and berries for a delicious breakfast. Or just nibble on the granola for a snack.
