EDAMAME, PEA AND BASIL SOUP

Tasty soup made with phytoestrogen rich edamame beans.

Ingredients

Serves 4

1 onion, chopped

3 garlic cloves, crushed

450g potatoes, peeled and chopped

160 g edamame beans (frozen) 

300g peas (frozen) 

750ml vegetable stock (more if needed) 

1 tsp frozen basil or a handful fresh basil

Salt and pepper

Method

  1. Put all ingredients into a soup pot. 
  2. Bring to a boil, reduce the heat and simmer for 25-30min. 
  3. Blend till smooth, add more veg stock of water in too thick
  4. Garnish with fresh basil and serve.
